In the crowded Galician markets and feiras, in front of bubbling and steaming copper cauldrons that fill the atmosphere with an appetizing aroma, pulpeiras flaunt their prowess through the skillful dance of their hands between the tentacles of the cephalopod. This ancestral art transcends the culinary delicacy to become a symbol rooted in the Galician idiosyncrasy. It arises in the journeys of the maragatos muleteers, nomadic merchants who made use of the octopus, (then of low value). Through the practice of drying and thanks to the paprika and olive oil brought from the south, they preserved it and then rehydrated it for consumption. Over more than two centuries, pulpeiras, with their expert hands, have refined the preparation of octopus, consolidating a culinary art in which each step is executed with mastery. The octopus is cooked to the perfect texture, then cut into thin slices and sprinkled with paprika, coarse salt and a generous drizzle of virgin olive oil. Each bite is not only a feast for the palate, but also evokes a journey through time and the cultural influences that have shaped this delicious Galician gastronomic tradition.
