This porcelain is decorated underglaze and vitrified at 1,450 º C, so that its decorations resist the most energetic chemical agents used in dishwashers and it is entirely unalterable to the action of fire. However, it is important to AVOID ABRUPT THERMAL SHOCKS . While the part covered by liquor is kept at a temperature that does not reach one hundred degrees, the upper part receives the heat of the flames and can reach more than four hundred degrees, which produce a great tension between both parts because of the difference in the expansion. That ´s why it is advisable to keep cold the upper part cooling it a little with the liquid, while stirring with the ladle. Otherwise, when the upper part is very hot, any cooling produced by the shaking of the liquor or the addition of wine at the edge, may cause the break of the casserole.
At the same time, a homogenous distribution of the heat should be tried to get, mixing the liquor with sugar and stirring frequently. If a part of the sugar remains attached to the walls and carbonizes, it will be cumbersome to clean it.
